Smoked Salmon and Spinach Fettuccine



A friend made this really quickly at my place for a dinner meeting. To spend less cooking time, she bought fresh fettuccine (they really make a difference. Fresh ones are just so so nice!) which cost about A$2+ for a packet of 500g (as compared to dried ones which can be as cheap as A$1 for a pack of 500g).

Cook the fettuccine as required. Add some olive oil when cooking so that they will not stick. When it is cooked (just a couple of minutes), transfer into a serving bowl. Add more olive oil. Add crumbled fetta cheese, shredded smoked salmon (when it is on sale, it cost about A$4 for a small 100g pack), washed baby spinach leaves and a good drizzle of olive oil. Toss everything together. I guarantee you will be happy for long time and delighting that it was that easy to make.

For a cheaper alternative, use the ever-so-reliable canned tuna. :)
