Pasta Bake


A jar of pasta bake sauce or pasta sauce is a good item to store it as a back-up in your pantry. Last week, I made up a batch of pasta bake with beef mince, peas, carrots and cherry tomatoes (really, just anything I can find in my fridge/freezer).

Cook up the beef mince and carrots (until carrot is soft). Cook spiral pasta separately until al dente. In a baking dish, mix cooked pasta, beef mince, carrots, frozen peas, cherry tomatoes (halved) and sauce. Top with shredded cheese. Cover the dish loosely with aluminium foil (aussies call it "al foil") and bake for 15-20 minutes at 180C. Remove the al foil and continue to bake for another 5 minutes until cheese is melted and browned slightly.

Note: This is not suitable for freezing (because the pasta will be too soft after reheating) but you may store excess in the fridge for no longer than 3 days.
