Found this simple recipe on Coles Summer magazine. I tried a slightly different version of it when we had some guests over for dinner on Saturday.
Instead of coriander (which I don't like) and mint, I used baby spinach as I have plenty in my fridge (bought a box for $0.99 from Aldi last week). Everything else is the same... We and our guests love it! This is simple, refreshing and healthy! You can have your veggie and fruit (and seafood) intake on the same dish!
Original recipe
400g cooked, peeled prawns, tails on*
1/2 rockmelon, peeled, chopped
1 bunch mint leaves
1 bunch coriander leaves
1/4 cup lime juice**
1/4 cup vegetable oil***
2 tsp white sugar
1 tsp fish sauce
Place prawns, mint leaves, coriander leaves and rockmelon in a bowl.
Whisk together remaining ingredients in a bowl to make a dressing. Pour over salad and toss to combine.
*I bought 300g cooked, peeled prawns with their tails on (on sale at Coles for A$18/kg). You may buy usual green prawns, remove shell, devin and cook them in boiling water for 1/2 mins or until it turns red.
**I used lemon juice since I didn't have lime.
***I used extra virgin olive oil instead.
I just had this for lunch (without the dressing). Super healthy!
