Homemade Ricotta Cheese

Toasted raisin bread with ricotta cheese and maple syrup. Yummy!

You would think that it is impossible to make cheese at home. Fear not, because this is very simple and very satisfying to make - ricotta cheese.

1.5L full cream milk
4 tbsp white vinegar

Pour milk into a saucepan and bring it almost to a boil, about 90C. You know it is about 90C when you see bubbles forming on the side of the saucepan.

Add 4tbsp of white vinegar, stir and turn heat off and leave to sit for 10 mins. The mixture will form curds.


Scoop out the curds into a Chux cloth (or something similar) placed over a strainer. Allow it to drain for 20 mins.

This recipe yields about 1 cup of ricotta.

Try it! People will be amazed that you are a "cheese maker" ;)
