Omurice (Chicken and Tomato Rice wrapped in Omelette)


My attempt (or should I say Quop's attempt) to cook this was not as pretty as it should look. However it was still rather tasty. See the original recipe here.

Quop reckons that we could have just made fried rice and have it with the omelette ;) I suppose it is really quite up to you!

Foo Yong Egg with Prawns


I love my eggs and I love them in most of the forms that they come in... except when it is raw :p

This dish is quite common in 'cze char' (literally meaning 'cook and fry') places in Singapore. Now you can make your own foo yong egg. Foo yong egg is basically an omelette but Chinese style.(What is a "foo yong" egg?)

I tried this recipe, except that I only used prawns and frozen green peas. I was lazy and did not use onions, chilli and spring onions.

Egg Tarts


I LOVE egg tarts - especially the ones with buttery pastry. I have been afraid to make them myself, thinking that it is difficult to make. I have had a recipe that I printed off from somewhere a long time ago but I had not gotten around to trying it. Recently I saw this recipe online and decided to seize a good opportunity to try making it for a family lunch gathering.

I am rather pleased with the result :) I made my first 4 tarts on Saturday and brought them to a dinner gathering as a sampler. I made extra pastry and left it in the fridge. I also stored the excess egg mixture in the fridge. 2 days later, I made another 16 tarts for a family lunch.

Notes:
- the pastry dough I made turned out too moist and sticky so that it was difficult for me to roll the dough out nicely. I added another 1/2 cup of flour but it did not improve a lot. I resorted to just pinching off bits of the dough and using my fingers to press it into the small tart tins (with loose bottom). The end result was not far from what I wanted. I received comments that the buttery, biscuit-like pastry was nice.

- if you like a less sweetened version, reduce the amount of sugar. Personally, I prefer the tart to be sweeter.

- if you do not have a tart tin with loose bottom, I think you can use muffin trays lined with baking cases. However, you might face a small amount of difficulty trying to press the pastry into the mould lined with paper baking cases.


During this past long weekend, I made double the portions of the recipe and served them at 3 different gatherings. Everyone loved them :)

Tomato With Eggs



3 eggs
2 tomatoes, cut into quarters and then halved
1 angled luffa or chinese okra, sliced

1 tsp shaoxing cooking wine or mirin
1/2 tsp light soy sauce
1 tsp salt
1 tsp sugar
1 Tbsp tomato sauce or 'ketchup'
pepper to taste

Combine eggs, soy sauce, salt, cooking wine, sugar and pepper in a bowl. Using a fork, whisk to combine the mixture.

In a heated frying pan, add 1/2 Tbsp oil. Add the egg mixture and, using a wooden spoon, gently stir the egg mixture in the fry pan. This is the same method of cooking if you were making scrambled eggs. When set, but is still moist, dish out the eggs onto a plate.

Into the same frying pan, add another 1@ tbsp oil. Add tomatoes and cook for 1 minute. Toss in the angled luffa and the cooked eggs. Add tomato sauce and mix well. Serve with rice and / or other dishes.

The angled luffa is optional. It is nearing the end of its season at this time of the year. You may replace it with spring onions, chives or zucchini, or just have tomatoes and eggs!

Simple Fried Rice

I cooked with prawns and garnished with fried onions and pork floss

This is probably my most successful fried rice of all the few attempts I have made.

(Serves 2-3. Everything is a guesstimate!)
1 cup rice (cooked the day before in rice cooker)
1/2 cup of mixed frozen veggies of peas, corn and carrots
1 tbsp soya sauce
salt to taste
1 tbsp water
1 egg, lightly beaten
1/2 cup minced beef / chicken / pork or prawns cut into small pieces
1 clove garlic, finely chopped
garnishes like spring onions, coriander, pork floss, fried onions (optional)

Into a fry pan, add 1/2 tbsp cooking oil. When oil is heated, add egg and spread across the pan. When the omelette is set, turn it over to cook the other side. Remove omelette onto a plate and allow to cool.

Add 1 tbsp cooking oil in the same fry pan. When the oil is heated, add garlic and stir fry for a few secs until the garlic is fragrant. Add minced meat (except for prawns if you have) into the pan until they are browned. Immediately add day-old rice (great for using up leftovers), frozen veggies, water, stock powder. Stir fry for 2-3 mins until the veggies are cooked. If you are using prawns, make a 'well' in the centre of the rice and veggies in the pan and add the prawns. They need not be cooked for too long, just so long as they turn red/orange.

Add soy sauce and enough salt to taste. (If you like it dark, add 1 tsp of dark soya sauce). Plate up the fried rice and garnish it with sliced omelette and other garnishes that you may like. Cut red chillies in soya sauce or preserved green chillies will go well with it :)


I did not use frozen mixed veggies in this attempt. I used frozen peas and I cut up 1/2 carrot into small diced pieces. I remembered I had some corn in the fridge so I thought I will add them as well.

Fried rice is such a versatile dish that you can add any meat/veggies that you like. There are a few flavours you can produce with different seasonings - sweet chilli sauce, chilli sauce, bbq sauce, oyster sauce, plum sauce, satay sauce, curry powder.
